This & That

I think I eat more when I'm home. 😀 The vegetables came in the Misfits Market box disappeared quickly.  I did not want to go to the store, so for a while I tried using what I already have in the pantry and the fridge. I made several loaves of homemade bread, soups and salads, and one pot meals such as seafood rice and vegetable rice. 





This bread is the easiest recipe I've tried so far. It's no-knead bread and has only all purpose flour, water, salt and yeast. I followed this recipe, but kept it overnight and baked in the morning.

I made seafood rice a couple of times, using canned oysters, squid and clams. Sometimes I make what I call 'fridge cleaning rice' using wilted bits of carrots, green parts of leek, celery and scallions.

This month I made green apple curry twice. I wrote the recipe here because Pauline at Happy Retiree's Kitchen requested. 😊


Green apple curry.

Though I didn't want to go to the store, I had to. I needed to buy a supplement, and could not order it online. So I went to the health food store. Their vegetables were more expensive, but I decided to buy from them anyway, to avoid going to another store.

This week I received my stimulus check. I transferred a portion of the check to a brokerage account. I plan to invest it in index funds.  I lost  over 20% of my retirement savings during the recent stock market crash. 

Three more weeks and then the semester is over! I can't wait! I was able to write labs for two classes,  and still have to make 8 tests, one lab and one quiz. 

How was your week? 


This week I'm grateful for:

1) yard guy mowing grass.
2) the stimulus check.
3) a safe trip to the store.
4) being able to finish labs for two classes.
5) having time to prepare a raised bed.
6) rain.
7) coffee. 😊

  1. Hi Nil, I found your blog a few months ago. I really enjoy it. I also teach classes with labs and am doing it online now. I don't think I could do this much longer! Glad the semester almost over. The apple curry looks delicious. I'm going to try it. Thank you, Celie

      Yes, I too find this remote teaching to be so stressful. And I miss interacting with my students. Hopefully we will be able to go back to classrooms in fall. :)

  3. Hiya Nil, lovely cooking there! Do you find you are craving fresh vegies and fruit atm? I know stress makes us need extra Vitamin C. Good idea to count your blessing too, I'm sure we all have so many that are over-looked or taken for granted. Stay safe xx

    1. Yes, Sue. I especially crave for greens. I did not know that stress made us need extra vitamin C. I have been taking extra vitamin C these days to boost the immune system. :)

  4. The bread looks fantastic! We are eating way more than usual. Most nights pre Covid, we ate dinner later then had nothing afterward.Now we are eating earlier and having a Netflix/popcorn night every single night.

  5. Thanks for the green apple curry recipe, I meant to ask you for it. I bought green apples in my last grocery delivery with it in mind. I haven't been out for over 3 weeks except to walk the dog, but see lots of people every day, neighbpurs and friends while walking, or they're going past while I'm in the yard...it's nice to have that bit of contact and a chat, even though at a distance. But I miss my voluntary work, and the kids at the high school where I did breakfast club, and was teaching sewing to the special needs kids.still, so much to be thankful for, and this too shall pass. X

  7. Must try your curry, just went over to my Indian friends house and she showed me how to make water cress curry (without curry) and long bean curry with tumeric- sooo yummy. I have actually been losing weight being at home because I am doing more walking and gardening LOL, have lost 8 kgs so far

  9. That bread looks amazing! I made no-knead bread, a couple of times, but, baked it without a Dutch oven (since I don't have one). Now, however, all I have is one expired packet of yeast as I forgot to stock up on yeast!

    I haven't really noticed myself wanting to eat more...maybe because I have been at home from even before the virus made it necessary?

    I'm sure you will be happy when the semester is over! Good luck with making all those tests, etc.!

  10. I'm not eating as well as I normally do and am putting on weight as a result so need to turn that around if I can. I've bought the ingredients for your green apple curry so will be trying that this week.

  11. Oh, I'm ALWAYS thankful for coffee.:-) Your bread is so beautiful! If you ever need ideas for your friends for holiday gifts, a loaf of bread would be perfect.

    I think I eat more when I'm at home too. I've gained a little weight lately!

  13. I've noticed that our Misfits market vegetables go quickly too. It's so great to have fresh vegetables in the house. Your green apple curry looks so good. Only 3 weeks to go until your semester is over, I would be excited too. :)

I bake Steve 2 loaves of an easy white/whole wheat bread (one knead) every Sunday, but I just used up the last of my bread flour yesterday and have not seen any in the shops since February. Oh well. We are still waiting for our stimulus money, maybe today will be the day! Stay healthy and well.

  15. Oh your bread looks delicious!!!!!! All the more so, to me! Because I have to eat Gluten Free, and there is nooooo G/F substitute for real, real, real Bread!!!!!!

    Glad you were able to get the veggies, at the one stop you had to make. We all have to make allowances for safety, at this time.

    Glad you got your Stimulus Check, which I am so happy our Government provided.

  16. I have made a similar bread, Nil, and once it's out of the oven we can't wait for it to cool so we can cut it. There's nothing like fresh baked bread, so who needs sensible food? Yes, I have often done a clear out the fridge type meal and sometimes those have been the most fun. Agreed on the eating more and exercising less even though we are trying to be careful. Hope the end of the teaching year goes well and that you can return to the classroom in the fall.

  21. Oh that bread looks scrumptious. We've been shy on the fresh vegetables too. I've tried to get those that would last longest in the fridge, like carrots and celery, so we've had stew a couple times. I ordered groceries in last week, but next week I am definitely going to the grocery and spending lots of time in the produce section.

    This was a lovely post and I enjoyed seeing all the interesting food you are making. I find I am eating more while being in the house all the time. This is an inconvenient time but as you pointed out, we have so much to be grateful for.
